How the Hybrid Workshop Works

  1. Join the Live Online Cohort (3 weeks)
    Six interactive sessions on Tuesday & Thursday evenings (PST), ~75 minutes each, hosted on Google Meet. Ask questions live, collaborate with classmates, and get clear on every step from mash to final bottle. If you miss a session, catch up with the recording.
  2. Apply It in the Distillery (2 Days)
    After your online cohort, choose an upcoming in-person lab to run equipment, practice cuts, proof & blend to spec, and troubleshoot alongside coaches. Next lab: Quartz Mountain Distillers, Vancouver, WA — Mar 21–22, 2026.

What You’ll Learn Online

  • Foundations: the beverage alcohol industry, the competitive landscape, and key regulatory checkpoints.
  • Process, End-to-End: mash design, fermentation control, distillation physics, equipment design & safety.
  • Makes & Cuts: how to identify heads/hearts/tails by numbers and sensory—so you can repeat it on the floor.
  • Proofing & Blending: finishing to label proof while protecting flavor.
  • Operations Basics: record-keeping, QA, and the daily SOPs that keep a shop running cleanly.

What You’ll Do in the Lab

  • Operate real equipment with instructor guidance—heat, cooling, pumps, and the still.
  • Run a spirit cut and practice decision-making in real time.
  • Proof, blend, and finish to target; troubleshoot smearing, proof drift, and filtration issues.
  • Leave with a repeatable process, practical checklists, and a Certificate of Completion.
